stove top + sour cream chicken

It's Thursday, Thursday, Thuuuursday! I can't wait for another weekend of fun around here. Since my ankle surgery I've been cooped up in the house during the week. The weekends mean something totally different to me now that they're my main source of socializing. How crazy is that? Anyways--I'm so excited to hang out with the boy and our friends and have some fun!

I saw this recipe on Pinterest yesterday and just had to try it. 
With the cast on my foot Ryan has been taking care of dinner and chores after work {except for when his sweet family sends meals home with him}. With it being right in the middle of his super busy season, it's tough for me to sit by and watch him do it all without my help.

 SO, yesterday I decided to throw this very simple recipe together in the crock pot so that something yummy would be ready to eat when he got home! This recipe is so incredibly simple. It took me literally 5-7 minutes to put this all together {including photo taking!}. Anyone can do it :)

Ingredients 
1 box of Stove Top {any type--original recipe used cornbread and I used chicken}
1 can of cream of chicken soup
1/2 cup of sour cream
1/4 cup of water
3-4 chicken breasts {I used 3-two were normal and one was large}

Directions
+Put the chicken in the crock pot
+Add package of Stove Top on top of chicken
+Mix together water, sour cream, and soup
+Add mixture on top of chicken
+Cover and cook on low for 4 hours
+Fluff and serve!
See, it's so easy! And look how delicious it looks :)

And when it's done...
You get perfectly cooked, juicy chicken with a "superb" {via the boy! lol} tasting stuffing.
I'm already counting down 'til the next time we have this for dinner!

Also, if you're interested, this beer paired really well with the meal! Hahahah

Cookie Monster

Hello friends! I'm back with another delicious post for you. 
I wanted to share this yummy cookie recipe with you as a Monday pick-me-up!
Yes, I have a major sweet tooth and a good sweet recipe is considered a pick me up around here ;)

I made this recipe as one of the many birthday sweets at our friend's cabin birthday party this past weekend. They were a hit! I usually use lemon cake mix, but I did red velvet just to switch it up a bit. They were definitely delicious, but the lemon is still hands down my favorite! These are so good you'll probably want to try many different cake flavors.

What you'll need:
*2 Eggs
*1 Cup of powdered sugar
*1 box of cake mix--any flavor
*1 regular size tub of cool whip (I used Lite)
*1-2 cookie sheets (I used 2 and did 1.5 batches)

Steps 1 - 3
Mix the whole container of cool whip with the two eggs. Then mix in your cake mix. Mixing the cake mix in is very messy--I suggest mixing a little at a time. The mixture gets very sticky, so this should help.


Steps 4 - 5
Preheat your oven to 350º
After you mix everything together put the mix in the fridge for ~30 minutes or until the oven is preheated. Putting the mixture in the fridge helps keep the batter manageable, as it gets very sticky. Do this between batches as well to help.


Steps 6 - 8
Pull out the powdered sugar and put about a cup of it on a plate (you can use a bowl if you'd like). Using a teaspoon, drop balls of batter onto the plate and roll around until covered with powdered sugar. Once they are covered, put them on a greased cookie sheet. Mine were about and inch apart.


Steps 9 - 10
Bake cookies for 11 minutes. Then place on cooling rack for 10-15 minutes (this helps them set!). Then eat them all a few and store the rest!

Recipe Time! Chicken Lasagna Rolls

Remember the awesome looking recipe that I talked about yesterday?
Well, after reviewing a few recipes, I combines a few to create my own! I thought they were delicious so I will share my chicken lasagna roll up creation : )

What you'll need:
3 Cups of cooked chicken
1/2 Box of chopped spinach*
1 Cup of ricotta cheese**
1/4 Cup of milk
1/2 Cup of Parmesan cheese
1/8 Teaspoon pepper
8 Lasagna noodles
1 Jar of pasta sauce
[I used a small amount of basil pesto in my mix too, but it's optional!]

1 Baking dish
Foil

*I used the frozen kind and thawed it a while before I started
**I was out, so I mixed 3/4 a cup of sour cream with 1/4 shredded Italian cheese blend. It works, but the flavor would have been SO much better with the ricotta cheese. Don't forget it at the store like I did!

First things first, preheat your oven to 375°

I would suggest cooking your chicken and lasagna noodles at the same time (but not together!). And just in case you're not good at remembering noodle cooking times....

Once you have the noodles ready (drained and dry), go ahead and spread about a cup of the pasta sauce on the bottom of your baking pan.
I used Classico!
Once you've done that, mix the chicken, cheeses, milk, pepper, and 1/2 box of spinach together. 
This is the mix, before I added the chicken.

While you don't have to use the spinach, it does help to "beef" up the recipe a bit to make it healthier and more filling.

Next, you'll spread about 1/2 cup of your chicken/cheese mixture onto each noodle, and then you'll roll them up. It was easiest to start the roll around one piece of chicken and then just keep rolling from there. Sorry, no picture of this step...it was a little messy!
[Don't overfill them! The 1/2 cup was just enough once we started eating them.]

After you roll them up, place them seam side down in the sauce. Repeat for all 8.

The last step is to cover them all with the leftover pasta sauce. You could also add cheese on top if you'd like : )

Cover and bake these bad boys for about 30 minutes.  Then serve with a salad and an extra sprinkle of parmesean cheese. Enjoy!
